Every day, at dawn, the countryside awakens enveloped in the enchanting scents of freshly baked cakes and bread, dancing in the air, creating a magical atmosphere. Sottolestelle is the beating heart of this poetry, with a bio-dedicated production facility. In our ovens, delicacies prepared with love by our staff and subjected to the strict attention of the Quality Department are born. Here, every goodness is a promise of passion and care.
We search for raw materials of the highest quality
Each ingredient tells a story: where it was born, how it grew and what journey it took to get here. Here at Sottolestelle we listen carefully to the story of all the raw materials used in our workshops, and choose only those that speak of love, patience and kindness. Ingredients that evoke light, the intense scents of flowers and the call of the earth that smells of antiquity. From first to last, our ingredients are selected with extreme care, and each one has been cultivated according to the strict principles of organic farming.
The best ingredients for tasty and genuine products
Flours from ancient grains
favouring semi-wheat or wholemeal.
The low refinement of the wheat grain guarantees the presence of all its nutrients. Moreover, the resulting products are tastier and more fragrant.
Vegetable fats
we choose those that are healthier for our health, such as extra virgin olive oil or high oleic sunflower oil. Low in saturated fats and rich in unsaturated ones, they are considered allies of health.
Selected Sweeteners
for our products we use only natural sweeteners such as rice syrup and agave syrup or raw cane sugar.

comply with Organic Farming Reg. EU848/18, so our ingredients are WITHOUT:
Synthetic pesticides, synthetic fertilisers, plant protection products*.
Preservatives, Artificial colourings, Artificial flavourings
Chemical extracts, GMOs**

Guaranteed and transparent Quality
Numerous checks are carried out in-house, including the determination of the absence of traces of milk and eggs using ELISA and spectrophotometer methods, sensory analyses and packaging checks for microbiological safety and organoleptic quality.
